Delicious & Easy Crockpot Teriyaki Beef {recipe}


This recipe is not only simple but oh so delicious. Everyone in your the family will love the melt in your mouth tangy beef. Serve over rice or for something different, spoon into a pita and top with shredded lettuce!

Crockpot Teriyaki Beef

* 1 lb Lean Round Steak Beef
* 3/4 cup Teriyaki Sauce
* 1 Large Onion, sliced
* 2 stalks Celery, sliced
* 3 Garlic Cloves, chopped
* 1/2 tsp Black Pepper
* 1 tbs Brown Sugar

{Directions}

 Spray inside of crockpot with cooking spray. Slice steak into 2 x 1/4 inch strips and place into cooker. Top with teriyaki sauce, celery, onions, garlic, pepper and brown sugar. Cover and cook on low for hours. 
Serve beef and sauce over rice.

If you would like a thicker sauce, turn your crockpot to High after the 7 hours. In a small bowl dissolve 2 tablespoons of corn starch in 2 tablespoons cold water. Slowly stir mix into crockpot and continue cooking on high for 20 minutes or until sauce is thickened.

Tasty food does not get more simpler than that!

Halloween Cake Pops



I made my first cake pops! It's only been like what, a few years since I first wanted to try..lol Well I finally did it! I actually became motivated because I wanted to do something special for the neighbor girls. A little something to say "thank you", for watching over C during her first week on the school bus.

They were actually a lot easier and did not take as much time as I originally thought. I think for my first go around they turned out pretty good. No exactly perfectly round or perfectly dipped, but they are super tasty! And really, that is what counts the most right?

The only piece of equipment I did not have was a Styrofoam block. So I looked around and got inventive. I used my cooking rack which was perfect because of the individual little squares and a piece of sticky mat. You know that stuff you put under your rug or in the cabinets to keep stuff from slipping? It works awesome for cake pops too!


Since it is autumn (slash) fall (slash) Halloween, I went with the vanilla flavored orange melts and deviled food cake, so it's super chocolaty. The pops are topped with purple, green and black sprinkles. I wanted to actually draw jack 'o lantern faces on them...but my food coloring pen wouldn't work, oh well. I think they still rock!

A Beautiful Fall Morning

Autumn is here, and it is gorgeous! Of all the places we have lived, Eastern PA is by far the most beautiful. All the leaves have turned beautiful bright fall colours. Yesterday afternoon while waiting for C's school bus a big gust of wind came through the trees and it rained down a shower of gold, red and burnt orange leaves. M stood in the middle of the road twirling in delight as the leaves rained down on her. It was such a sweet sight, and of course, me without my camera to capture that moment.


I did however capture these pictures of autumn. On my way into town the other morning I stopped by a near by lake. The sun was still rising and shinning bright across the water. There was heavy low lying fog mixed with brilliant bright colors from where the rays of sunlight shown.

The water was like glass, the most still I had ever seen it. No fishermen out this morning, no fish jumping. My only company was a crane enjoying the chilly morning air.


Soon the snow will come and create a whole new beauty. While I am excited and a little giddy with anticipation, I am somewhat nervous too. I have never lived in "snow". While stationed in VA we had maybe at the most 2 inches. Just enough for C and daddy to scrape together to make a 1 foot snowman...lol This will be a new adventure, our lives are full of them. I love my new beautiful country life.

Her First School Bus & Bentos


Last Weds C took her first bus to school. I was so nervous for her, but I knew 1) that the older neighbor girls would take good care of her and 2) when she said goodbye....oh wait, that's right, she didn't. The bus pulled up to our corner and with no "goodbye", "love ya mom" or even a glance backwards at me standing there, she was on the bus and gone. While it broke my heart just a little, I was so happy for her new found independence.


So for her 2nd day riding the bus (Thursday) I made her a school bus sami with cheesy details. Carrots and "Scooby snacks", black grapes and tomato balloons round out her Easy Lunchboxes container.


Friday's lunch was an autumn leaf sami, pumpkin carrot mini muffin, melon, tomatoes and ABC cookies.



To start of this weeks lunches C had a fun elephant sami with a carrot water spout. Tomatoes, pumpkin carrot mini muffin, melon and mini Halloween shortbread cookies.

Look, Up In The Sky!



It's a bird, it's a plane, it's....our neighbors? To our surprise we learned last week that one of our neighbors has a hot air balloon. My husband had went out to the patio to talk on the phone and all of the sudden he started screaming, "balloon, get your camera". "Girls come quick". Really I thought? A balloon? You want me to stop what I am doing for a balloon? I almost ignored him, but the tone in his voice was something I hadn't quite heard before.

So I grab the camera, and slowly made my way outside. I step off the patio, turn toward the woods and BAM! There is a freakin hot air balloon in my backyard! As our neighbor and his passengers floated through our backyard, my girls squealed with excitement. Wildly waving and jumping up and down to catch the passerby's attention.


As they floated closer to the house you could see the open flame and hear the load roar. They were coming in lower and lower, closer and closer to our house. My husband actually questioned out loud, "are they landing in our backyard?" I laughed.



Our neighbor yelled out "hello" and we yelled back.  "We are out for one more ride, before the rain comes", he said. Wow, to be able to say that, how spectacular. "Hey honey, wanna take the hot air balloon out before it rains?"...lol


They passed right by the east side of our home. We watched them come in for a landing in an open spot in the woods in front of our house. Lower, lower, lower they disappeared into the woods. What an amazing site! Definitely not what I expected to see when we moved here.

Simple Homemade Hostess Apple Pie's {Recipe}




My husband loves Hostess Apple Pie's. So of course he only had one request while we were out picking apples a week ago. After making apple pie filling and apple butter, I decided to finally oblige him. Never making these before I figured it couldn't be to hard right? I do not have proper measurements for this recipe. I totally winged but you know how I love semi homemade baking, so this has to be simple.

{Simple Homemade Hostess Apple Pie's}


* Apples peeled, cored and diced
* 1/2 cup Water
* 1 Tbs Lemon Juice
* Sugar
* Cinnamon
* Nutmeg
* Egg
* 2 boxes Refrigerated Pie Crust Dough

{Directions}

In a large pot add water and lemon juice. Peel and core apples then dice into small cubes. Add cubed apples to pot. I  peeled about 8-10 small apples.

If you work with lots of apples (as I have this season) I highly recommend getting one of these nifty "suzy homemaker gadgets", as my dear husband calls them. I admit I have a obsession with kitchen gadgets, but I really love this one. After hand peeling and coring 80 apples for the chunky applesauce I made last month, I went on the hunt for this! Not only do I love it, but the girls think it's pretty cool too, especially when they get a spiral cut apple for a snack.


Once you have the desired amount of apples, set your pot on the stove and cook on Medium heat, stirring occasionally until the apples start to soften. Turn heat down to Low.

Add your sugar, cinnamon and nutmeg to the pot and mix well. Add your sugar and spices based on your taste. For my pot I added about a cup of sugar, 1 Tbs of Cinnamon and 1 Tbs of fresh micro grated nutmeg. Once mixed, taste the juice and adjust the sugar and spice according. I love spices so I tend to add more than most.

Continue to cook on Low until the sugar has cooked down and has made a syrup. Remove from heat and set aside to cool. The syrup will thicken as it cools.

In a small bowl crack your egg and whisk, this will be your wash for your pie's. In a separate bowl mix 2/3 parts sugar to 1/3 part cinnamon, this will be sprinkled on your pies before going into the oven.

Preheat oven to 350. Roll out your prepared pie crust round. Decide how big you want your pie's. I used a bowl approx 6 inches round to cut out my pies from the prepared pie crust. Set aside the scrap crust. Fill your rounds with a spoon full of filling.

Fold over the crust to make a crescent. Seal the edges by crimping them with a fork. Poke a few holes in the top of the pies to allow the steam to escape while baking. With a basting brush, "paint" the egg wash over the tops of your pies. Top with a generous sprinkling of your cinnamon sugar mixture.

Combine all the scrap crust, knead together and on a floured board, roll out. Cut out your crust rounds and repeat this process until you have used up as much as the scarp crust as possible. Fill and seal your pies as mentioned above.

If you find, like I did, I had left over filling don't worry. It is wonderful warmed over vanilla ice cream, a delicious topping for pancakes or eat it straight up like my girls do :)

Bake at 350 until pies are golden brown. Pull from oven, let cool and enjoy!

Canned Apple Butter {Recipe}



I love buying fresh apple butter from local orchards but this year I thought I would make my own since we now have a couple trees with our new home. Score! This recipe is adapted from Simply Recipes and is amazing!

{Apple Butter}

*4 lbs of cooking apples
* 1 cup apple cider vinegar
* 2 cups water
* Sugar (See directions for amount)
* Pinch salt
* 2 tsp Cinnamon
* 1/2 tsp ground Cloves
* 1/2 tsp fresh grated Nutmeg
* 1 oz Lemon juice
5-8 (8 oz) canning jars


{Directions}

Wash your jars, lids and screw bands in hot soapy water and rinse.

Using a tall stock pot add jars, lids and screw bands and fill with enough water to cover 1-2 inches about top of jars. Set stove to simmer and cover.

In a large add vinegar and water. Without peeling or coring the apples, cut them into quarters and add them to the pot. According to the recipe, most of the natural pectin in in the skin and core which is why you leave it intact. Bring pot to a boil and reduce heat. Cover and cook down for about 20 minutes until apples are soft. Remove from heat.

Ladle apple mixture into a fine mesh strainer or sieve. I used a wooden spoon and my ladle to smash and stir the pulp and mixture through the strainer into a pot below. 

When you have finished processing all your apple mixture, measure the puree into a wide, heavy bottom pot. For each cup of puree, add 1/2 cup sugar, (I had 8 cups of puree so I added 4 cups of sugar). Add spices, salt and lemon juice to the puree and stir to mix well.

Cook puree uncovered on med low heat, stirring consistently to prevent sticking. Make sure to scrap the bottom of the pot to prevent a crust from forming. Cook for 1-2 hours. If you can not stand over your pot for an hour or two, turn heat down a pinch so it is still bubbling, but when you stir it, you find it is not sticking to the bottom. Turning the heat down will cause the cooking time to increase but not by much. When puree is cooked down and has thickened, remove from heat.

Remove your jars from the simmering water and set them on a paper towels for easy cleanup. Quickly ladle the apple butter into the jars to within 1/4 inch from the top, any less and you will not get a proper seal. Wipe the rims and threads of the jars clean, then place the lids and tighten the screw bands. Be careful, jars are HOT!

Carefully add jars back to the simmering water making sure they are standing up right. If your water is not 1-2 inches above your jar lids, add extra hot water. Once all jars have been added cover and bring pot to a gentle boil. Once the boil is reached set your timer for 10 minutes.

Once your 10 minutes are up carefully remove the jars from the pot. Place your jars on the counter on a towel or I used my wooden cutting board, and leave them undisturbed until cool. I let mine sit on the counter overnight.

After the jars have completely cooled check the lids to see if your jars sealed. Press down in the center of the lids. If it springs back and makes that popping sound, they are not sealed. However, no spring back....your golden!

Pumpkin Carrot Mini Muffins {Recipe}

Pumpkin Carrots Mini Muffins (3)

I think fall is the best time of year to bake. Not sure why, maybe because it's getting colder and the leaves are changing. Maybe because the apples, pumpkins and berries are ripe and ready to pick. There is just nothing better than a warm oven and catching a whiff of sweet scents and delicious spices as you move from room to room.

I love to make mini muffins for my girls lunches and when I found a can of pumpkin in my pantry I knew what I had to do. Here is one of my most favorite autumn mini muffin recipes, enjoy :)

{Pumpkin Carrot Mini Muffins}


Ingredients:


* 1 cup Pumpkin puree
* 1/2 cup melted Butter
* 2/3 cup Sugar (white or brown)
* 2 Eggs
* 1 cup grated Carrots
* 1 1/2 cup Flour
* 1 1/2 tsp Baking Powder
* 1 tsp Baking Soda
* 1 tsp Cinnamon
* pinch of Salt
* 1 tsp fresh nutmeg
* 1/2 cup Raisins

{Directions}


Preheat oven to 350


In a bowl mix together the pumpkin, butter, egg and sugar. When combined add the grated carrots, flour, baking powder, baking soda and spices. Mix well. Fold in the raisins.


Pumpkin Carrots Mini Muffins



Spray mini muffin tins with baking (or cooking) spray. Spoon batter to the top of each cup. Bake at 350 for approx 10-13 minutes. My oven runs hot, so adjust your temp and cooking time according to your oven.

Out My Bathroom Window


Sunrise and sunset are my most favorite times of day. I am always in awe of how the days start and end at the same time, yet always look completely different from the day before. I happen to be blinded by a very bright light shinning through my bathroom window yesterday morning. I looked out the window and noticed the sun coming through trees and the streams of light streaking my backyard. Beautiful!


A few minutes later I let Sookie out. I went back to the bathroom to finish my hair and I watched her. She was hoping to see her family of deer that comes up from the woods and wanders through our property. She loves them. The sun was much higher now and shadow tree's were being made. Total silence and peace on a gorgeous fall morning.

Crockpot Sweet N Sour Chicken




Another tasty and super easy crockpot recipe adapted from Betty Crocker.

{Ingredients}

* 6 large boneless, skinless chicken thighs
* 1 1/2 cups baby carrots
* 1/2 tsp red pepper flakes
* 1 1/3 cup sweet and sour sauce
* 20 oz pineapple chunks, drained
* 1 bag Frozen bell pepper and onion stir fry, thawed, drained
* 2 cups regular long grain white rice
* 4 cups Water

{Directions}

Spray cooker with cooking spray. Place carrots and chicken in cooker and sprinkle with red pepper flakes. Cover and cook on low for 6 hours. 

Remove chicken and carrots from cooker and discard cooking liquid. Return carrots and chicken to cooker, pour sweet and sour sauce over chicken and top with pineapple and sir fry veggies. Increase to High and cook 45-60 minutes or until stir fry veggies are tender.

Cook rice as directed, serve chicken mixture over rice.

Canned Apple Pie Filling Recipe





I found this recipe from All Recipes. I was excited about making this because we recently picked a ton of apples from the trees in our backyard, maybe too many. I love making apple pies and my family loves eating them, so win win. I really like that in the winter when I feel like making a pie, I can just grab a jar from the pantry, pour the jar into a crust, bake and eat. So simple!


{Apple Pie Filling}

* 7 quarts peeled, cored and slice apples
* 4 1/2 cups Sugar
* 1 cup Cornstarch
* 2 tsp Cinnamon
* 1/2 tsp fresh nutmeg
* 1 tsp kosher salt
* 10 cups water
* 3 tbs Lemon Juice


{Directions}

Wash your jars, lids and screw bands in hot soapy water and rinse.

Using a tall stock pot add jars, lids and screw bands and fill with enough water to cover 1-2 inches about top of jars. Set stove to simmer and cover.

In a large sauce pan mix sugar, cornstarch, spices, salt and water. Cook over high heat until thick and bubbly. Remove from heat and add the lemon juice.

Tightly pack apples into hot, sterilized jars. Carefully ladle syrup over apples, coating as much as possible. Gently tap bottom of jars to release any air bubbles to the surface. Add more syrup in needed to cover apples. Leave 1/4 inch from the top of the jar. Wipe rim and threads of jar, place lid and tighten screw band.

Carefully add jars back to the simmering water making sure they are standing up right. If your water is not 1-2 inches above your jar lids, add extra hot water. Once all jars have been added cover and bring pot to a gentle boil. Once the boil is reached set your timer for 30 minutes.

Once your 30 minutes are up carefully remove the jars from the pot. Place your jars on the counter on a towel or I used my wooden cutting board, and leave them undisturbed until cool. I let mine sit on the counter overnight.

After the jars have completely cooled check the lids to see if your jars sealed. Press down in the center of the lids. If it springs back and makes that popping sound, they are not sealed. However, no spring back....your golden!

Sealed jars can be stored on the shelf for up to 1 year.

Crockpot Chicken Cacciatore




The other day I made a pot of tasty chicken cacciatore. The whole family swooned over the recipe and the girls actually did not mind having leftovers last night. It has been awhile since I have used my crockpot, but with money tight this past month I decided to do something I have been trying to do, and that's actually plan meals for two weeks. And I totally rocked it out! With how busy it has been since both girls started school I decided most dinners needed to be made via crockpot.

This recipe is adapted from the Betty Crocker Slow Cooker mag winter 2007. You know, those small recipe books you find at the checkouts? I am addicted to them and can't stop myself from buying them. Now (after years of collecting) I am finally putting them to use...lol

Oh and by the way, do you notice anything different about this post? I have a new obsession... digital scrapbooking! I have always (and still do) marvel at the wonderful digi scrap pages Katie @ Katie's Nesting Spot posts and have always wanted to do it, but thought it was too hard. Then I saw a giveaway for My Memories Digital Scrapbooking program hosted by Annie Bakes and thought, "what the hell". Well I won!!!

It really is a lot easier than I thought and all the amazing designers out there who create these kits for digital scrapbooking are genius and so talented. Anyways, yes I have been having a blast and now can add a little more oomph to the blog as well as finally getting my years of pictures into an album...lol  :)

{Chicken Cacciatore}

* 12 boneless skinless, chicken thighs
* 4.5 oz Sliced Mushrooms, drained
* 12 oz Italian style tomato paste
* 14 oz Chicken Broth
* 1/2 cup White Wine
* 1 1/2 tsp Basil
* 1/4 tsp Thyme
* Pinch Salt
* 1/2 tsp Black Pepper
* 1 Bay Leaf
* 12 oz Linguine
* 1 tbs Cornstarch
Shredded Parmesan

{Directions}

Spray slow cooker with cooking spray. Place chicken, mushrooms, tomato paste, chicken broth, wine, spices and bay leaf into cooker. Stir gently to mix. Cover and cook on Low for 8 hours.

About 15 minutes before serving, cook and drain linguine. Remove chicken for cooker and cover to keep warm. increase heat to High. in a small bowl, mix 1/4 sauce from the cooker and 1 tbs cornstarch until smooth. Add mixture back into the cooker and stir. Return chicken back to cooker, cover and cook on high for 10 minutes. Serve chicken and sauce over pasta, sprinkle with parm.

So far this week has been busy, busy! My youngest M started PreK on Monday and hubby is on leave all week. Sunday we went out to the apple trees on our property and picked so many that I spent yesterday canning Apple Pie Filling and Apple Butter (recipes to come) and made a delicious Chicken Cacciatore in the crockpot (recipe posted soon). So needless to say I am behind on posting this weeks lunches.

Monday we went for a turtle theme because it seemed like it would be a slow week. A turkey sami turtle with
a cheesy shell. melon and goldfish. Tuesday was a zoo of a day, so it was fitting that the lunch was also a zoo. Turkey animal sami's, melon and tomatoes. Today I want C to know she is my shinning star so packed in our Easy Lunchboxes we have a PB & Honey sami, carrots, melon, grapes, yogurt pretzels and raisins.

Rainy Daze Bento & Our Black Bear


You may have heard about the outrageous flooding around PA and Maryland. Thursday we woke to find emergency alerts all over the local news. I saw right away C's school was closed, as well as every school in the surrounding boroughs and townships. I broke the news to C and she was so upset but I had to explain we had no where to go. By this time the roads around us where closed or in the process of.  The Susquehanna river was rising with no sign letting up and the flooding was reacting historic levels.

It had been raining for 5 days straight, and in those 5 days we received 3 months worth of rain. I called hubby as soon as I saw the area in which his unit is was taking on water and the levels were rising. He had only enough time to tell me they were evacuating all gear and armory from the Unit and moving to higher ground. Then I hear the whole surrounding area was under a 4pm evacuation time. I watched the for two days nonstop in amazement. Homes floating down the river and being crushed under bridges, someone's refrigerator floating down the street which was now a water way. People sloshing through almost waist deep water. What just happened? 

So to keep my troops entertained since there was no school and we were basically confined to the house since most roads we would travel were closed, we decided to make a bento for the day. C thought of the umbrella sami and I added the carrot rain drops and cheesy clouds. As much as I tried to explain to them what was going on, I do not think it totally clicked, maybe because we weren't affected like everyone around us. School is back in session for us today while so many are still closed and trying to rebuild.

Not only people were miss placed by the flooding.......





My neighbor called at 3 pm to notify me our neighborhood black bear was walking back and forth in the tree line between our property. WHAT? it's 3 in the afternoon, so rare. Normally he comes by in the middle of the night and takes a few bird feeders with him from their yard.

I grabbed my camera, and my telephoto lens (I wasn't getting to close) and went out looking for him. For a moment he disappeared and then I turned around and hello! I saw him strolling through the back of my property. Sniffing around, taking his time, then he came upon our apple tree and decided he was hungry. I watch in awe. He had to have known I as there as I am standing in the middle of an open yard maybe about 100 feet away. It didn't seem to bother him, he went on snacking then calmly walked into the woods and poof......he was gone.

Sew Fierce Custom Dress Giveaway *CLOSED*



It is day #3 of our Blogiversary Giveaway and I hope everyone is having a blast! Today you can enter to win a custom made Summer Dress from my shop! I know fall and winter is coming (unless you live where I do and it's already here) and your thinking "summer dress?" This is not just any summer dress, add a pair of tights or leggings, a long sleeve shirt or a turtle neck and some rockin boots and ta-da, chic winter wear!

I have picked out this adorable fabric from Moda Hushabye by Tula Pink Collection. The flowered duckies just make me smile.  I am offering this dress to be made in the following sizes. 12m, 2T, 3T, 4T, 5-6.
