Hungry Girl Thursday - Outside-In Turkey Tamale Pie

PER SERVING (1 cup): 230 calories, 7.5g fat, 481mg sodium, 21g carbs, 3g fiber, 3g sugars, 19g protein -- POINTS® value 5*

Get ready for an amazingly comforting, scoopable, Mexican-inspired dish, because HERE... IT... IS!!! Just a warning: This stuff is hauntingly delicious!




Ingredients:1 1/4 lbs. raw lean ground turkey
3/4 cup yellow cornmeal
1 cup fat-free chicken or vegetable broth
One 14.5-oz. can diced tomatoes with chiles
1 small onion, chopped
3/4 cup canned sweet corn, drained
1/2 cup canned kidney beans, drained
1/2 cup sliced black olives, drained
2 tsp. chili powder
1 tsp. ground cumin
Optional toppings: fat-free shredded cheddar cheese, fat-free sour cream

Directions:
Bring a large skillet sprayed with nonstick spray to medium-high heat on the stove. Add turkey and spread it around to break it up a bit. Cook and crumble until meat is brown and cooked through, about 6 minutes. Drain any excess liquid and add turkey to the crock pot.

In a bowl, combine cornmeal with broth and whisk thoroughly. Let stand for 5 minutes.

Add cornmeal mixture to the crock pot along with all other ingredients. Mix thoroughly.

Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours.

Serve and, if you like, top each serving with cheese and/or sour cream. Mmmmmm!!!

Look What I Got!!!

I love my bloggy friends. A Little while back I posted about a surprise I found out I was receiving in the near future from my girlfriend Katie of Katie's Nesting Spot. Well, it finally arrived! I have admired for some time how crafty she is with scrap booking, cards, crafts and more. Now to see her work in person is just as amazing as what she posts, even hubby was all "ooo and ahhh".





First everything was packaged all sweet and perfect, that was until the girls and I got to it..lol



Book tags, postcards and clips all designed by Katie...


 This adorable book was definatly a surprise. The tabs pull out of their pockets and you can add a picture or write a memory onto each card.





Is this just not the cutest little book ever!!!

That wasn't all int he box. She even included a surprise for C & M. How sweet is that!







She gave them each a activity pack. Tinker bell and Princesses. So perfect for my girls. They spent the rest of the day quietly coloring. That was the best gift mommy cold have received..lol

Thank you again Katie you rock and I still think you should seriously think about opening an Etsy!!! Your stuff is to die for. Beautiful, unique, wonderful quality and craftsmanship...I'm just sayin :)

Our Handy Manny Party

The girls had a blast for the Handy Manny's Big Race premiere. If you saw my post on Saturday (click here) then you know we got to participate thanks to Mom Central and Playhouse Disney in having a little premiere party. Originally I had planned for this event to be a playdate with some of C's friends but right before finding out we had been accepted to hold the event I had made plans to visit my mom. Mom Central was so sweet to let me turn my original playdate idea into a family affair.

I was a little bummed b/c I missed the Twitter party..ugh. It was on EST and I am PST so I got all jacked up in my timing and jumped on Twitter just as they were ending..bummer but we still had our party!

Sow what did we do for Handy Manny's Big Race day?







The girls and I made "Race Lights" Cupcakes. They decorated each one with red, yellow or green sprinkles. Super yummy.

We also made  "Racing Wheels" Pizzas with English muffins, sauce, pepperoni and racing stripes (aka shredded cheese..lol)






My girls love the "Print & Color" pages you can get at Playhouse Disney so it was a perfect idea to print out some Handy Manny sheets for them to color while we watched the show.




We had a blast. The show was great..Handy Manny won the race. C thought it was a cool idea to have a themed party for her cartoons and now thinks every cartoon should have it's own event..yah do not see that happening, but we enjoyed ourselves tons. Thanks again to Mom Central and Playhouse Disney.

Surprise Visit To Family

I could not blog about it earlier because sometimes my mom reads my blog (sounds like I 10 right..lol) but it is safe now. Yesterday the girls and I packed up the car and drove over 500 miles to surprise my mom with a visit! My brother Dave and I had been planning it for the past few days, we even got my moms coworker Trish in on it by marking mom off work for today.

The drive was good. We hit normal LA traffic but wasn't too bad. The rest of the way the freeway was totally open. I have not made this drive in years. Really I have not been back in the Sacramento/Davis area since C was 6 months old.

Everything was beautiful and green, which usually the drive up the I-5 is pretty dull and boring from what I remember. Everyone was moving along. No 60mph stragglers that are always riding next to the big rigs and never pass them making it impossible for you. Yep, 2 lane highway...just cruzing. Hubby was supposed to come with and be my A Driver but when he went into work he found out his command canceled everyone's comp day so he had to stay behind. Regardless the girls did awesome on the drive, Sookie was another story. She stressed a little, but a eventually gave up and finally lied down on her bed to rest.

We finally roll into Davis at 8pm stealth mode. Lights off coming up to the house, cut engine, jumped out of he car in ninja fashion and went up to moms front door. I reached out to knock, then saw the door bell..oh yah! I rang that door bell over and over, faster and faster..teehee. When the door flew open we shouted "surprise"! Yes, a huge surprise. Mom was stunned.

Isn't that the best feeling. When you surprise someone and they are speechless. The excitement that comes over their face and when you can see their heart jump out of their chest..priceless. So we unloaded the car and introduced Sookie to her border collie cousins Sammy & Fletcher. They all made nice, although Sammy is still not a fan of Sookie's but she is tolerating her. Sookie is showing wonderful doggie etiquette by being submissive to the dogs of the house.

My other brother Dan came over for a spell. It has been 5 years since I have seen him. Last time was when I was 6 months pregger's with C..so yah just a little bit ago. He looks great and the girls who normally are very shy took to him very quickly so that was awesome to see.

So what's the plan for today? Not sure, we are going to play it by ear, but pictures will follow later.

HG Thursday - Shamrock 'n' Roll Shake

Raise of hands...how many of you went to McDonald's yesterday for a Shamrock Shake? Hmmmm, that many of you huh..lol I must confess I wanted to but yesterday got way to busy and I didn't have the chance. Probably better for me that I didn't yah know with all those super yummy calories, but it still sounds so good. So thanks once again to Hungry Girl, she has a low cal solution!



















PER SERVING (1 shake, entire recipe): 176 calories, 4g fat, 142mg sodium, 29.5g carbs, 3.5g fiber, 16g sugars, 7.5g protein -- POINTS® value 3*

Ingredients:
1 tbsp. Coffee-mate Sugar Free French Vanilla powdered creamer
3/4 cup light vanilla soymilk
1/2 cup Breyers Smooth & Dreamy Creamy Vanilla fat-free ice cream
1/4 tsp. peppermint extract
2 drops green food coloring
1 no-calorie sweetener packet (like Splenda)
1 1/2 cups crushed ice (8 - 12 ice cubes' worth)

Directions:
Combine Coffee-mate with 1 tbsp. hot water and stir to dissolve. Transfer mixture to a blender and add all other ingredients. Blend at high speed until mixed thoroughly. Pour into a glass and enjoy!

MAKES 1 SERVING

Happy St Patty's Day!

No big festivities this year for St Patrick's Day. Granted I haven't "celebrated" the day since I have had kids, but yah know how that goes. So what did we do special for this day? Why we got dressed up of course. Rather I should say the girls got dressed. Ciera had "free dress" day today so she was excited to finally wear the dress I made a week back, and Maddz is sporting her new outfit with plenty of green.

The top pattern I just purchased from You Can Make This. It is called The Sally Top by The Posh Petunia. I saw it and knew it would be adorable with some pants, and it is! M has already had many compliments today walking around target..lol




So what crafty things did you make for St Patty's day??? Any plans to drink green beer?

Death, Celebration, Surprises

Wow this past week has been full of surprises. My mom called a few days ago to tell me my great grandmother Rita had passed. Even though I have not seen her since I was like 10 (or maybe younger), she has never forgotten a birthday or holiday. Growing up even when my life was at it's most unstable, and difficult times, I could always count on her to never forget. I have several grandparents, but out of all those grandparents only GG Rita and my other Grams (whom I grew up around) never forgot me. When you are a kid and your parents are not together you notice and wonder as the years pass how come your dads side of the family never once called or even sent a card for any holiday let alone a birthday. Not my GG Rita, she was always there. As I grew up, myself or my mom would always send her pictures of us kids. That was her favorite..pictures. I then married and became a mom and still every year I would send her pictures of her Great Great Grandbabies C&M..and of course she never forgot to send me cards and of course she never forgot the girls either from the moment they were born. She was amazing like that. Now she has passed and I have tried not to think about it...until now. I haven't seen her since I was young, but she has always been a presence in my life and I will miss that and I will miss her deeply.

Yesterday was my Anniversary (6 years). It was a busy, busy day, but wonderful. Out and about running all over town, going out to breakfast, shopping, playing at a playground that sits on the water in Shelter Island...it was a beautiful sunny day with a crisp breeze coming off the water. It was however a long day and the "spring ahead" time change did not help at all. The girls were troopers, 8 1/2 hours we were out yesterday and not a cranky kiddo to be had.

Today has been just as busy, running around doing the errands I didn't get to yesterday plus of course picking up more fabric from one of my newest fav fabric Etsy shops So Fun Fabrics. So here I am sewing away on a  couple dress orders  and I decide "this lady needs a brake"! What do I do for a brake? Hop on the computer of course...lol
