Chorizo Lovin

Of course we are happy that we moved back to Southern California. Great weather, being with family, awesome outdoor activities year round, ect. Why am I really glad to be back home...the Mexican food! We are in hog heaven again. Sorry but Virginians have no idea what true Mexican food tastes like. We actually became depressed when we moved back East and found no decent restaurants. Why else am I happy to be back, real Chorizo! The other night for dinner I made breakfast..Chorizo with eggs and potatoes. It was divine! So I thought I would share one of my favorite recipes. It is quick, wicked easy and so yummy.

Actually I do not have a "recipe" for this per se, I do it by site and how many peeps I am feeding. On this night I made it for hubby and I with several leftovers for him to take to work. So I guess it made 6-8 servings. Also my special ingredient is frozen O'Brien potatoes. Why? Chorizo is greasy and I use the potatoes to soak up all that yummy, flavorful grease and keep it in my food instead of ending up in a smeary puddle on my plate. It's okay, my arteries are good..haha

1 Tablespoon Oil

Half bag of O'Brien Potatoes frozen (I like the one that has diced bell peppers in it too)

1 package of Chorizo

4 eggs whisked and set aside

In a skillet heat Oil. Add frozen potatoes and cook on Med-High until slightly browned. Cut the Chorizo casing and add Chorizo to skillet. Turn heat down to Med. Brake down the Chorizo while mixing it with the potatoes. Once Chorizo is fully cooked and mostly "melty" and your whisked eggs. Cook and turn your mixture all together until eggs are cooked and mixture does not appear "wet". I like to top it with some shredded cheese and let it melt before serving.

That's it your done! Easy right?

How to eat it? You can roll it up in a tortilla like a gringo if you like. In this house we tear up corn or flower tortillas and use the pieces of tortilla to pickup the Chorizo mixture. It's so yummy!

My husband would LOVE LOVE LOVE that breakfast! Only problem is, I can burn water, so goodness only knows what my attempts at making it would look like. ;o)

Stopping in from SITS--this looks really yummy!! I'll have to try it. Ha...the first time I experienced REAL mexican food was definitely a shocker...but there isn't anything like it...and to think there are people out there who believe Taco Bell is real mexican food....

Ok we must have been separated at birth! Tattoo lovin', motorcycle ridin, coffee infused...AND You love mexican food as much as I do! But I am from the southwest so I am suppose to love it....and speak fluent spanish...but only under the influence of LOTS and LOTS of tequila! So glad you stopped by!

When we moved back east we were so disappointed too. The difference in the style of food on the 2 coastlines is amazing.

We are glad to be back in San Diego too and I hope to never have to leave again.

When I lived in Europe I totally jonesed for Mexican food - it is impossible to find good or bad - but we are spoiled in CA by having truly awesome Mexican food, love chorizo!

So I am from Arizona and I totally understand the Mexican Food needs! I lived in Wisconsin for a few years and truly suffered through some really bad attempts at Mexican food...but, not anymore! Happy SITS Day!

Being from TX, Mexican food is a STAPLE in my diet. So much so, in fact, that I don't think I could live in a place that doesn't have it. Migas with chorizo is my fave for breakfast. :)

I just moved from San Diego to Austin. My hubs and I grew up there. So yes, we are Mexican food deprived. I am so sick of hearing about Tex-Mex. Because it's not Baja-Mex and not even near being close to good! I'm so sick of craving a good carne asada burrito with American guam and cheese only. Yummmm.

Here's my chorizo that I make in a quesadilla recipe:
cook the chorizo. Then add in shrimp. Cook until pink/warm.
Use pepperjack cheese and add the above two ingredients and make a quesadilla. Not a holiday goes buy that I am not forced to make those!

On every visit to Southern California we always make a visit to a really good Mexican restaurant. Trust me - there are very few Mexican restaurants here in Vancouver (Canada). That dinner looks pretty good.

Chorizo is my most favorite thing in the world - also the reason I won't leave Texas. Chorizo con huevos is my most favorite dish and I could eat it every day - but I don't. I'm not trying to get rolled out of the giant hole they cut in the side of my house and all that. I love chorizo but not that much.

Oh Yum! That's one of my favorite things about living in California too ~ The great Mexican food. Just the other day, my husband's buddy brought us over a huge bag of homemade tamales! Divine! Your recipe sounds wonderful. Chorizo and eggs is one of my absolute favs!
